In 2003, Antoine OLIVIER brilliantly took up the family mantle to elevate the estate to the pinnacle of Santenay, carrying along an appellation once underrated that now produces wines celebrated among Burgundy's finest.
He immediately put his core beliefs into practice:
- In the vineyard, by growing wholesome, beautifully ripe grapes.
One only needs to stroll through his vines to witness living soil that expresses the essence of the terroir at its very best.
He champions an eco-conscious approach by cutting down on synthetic treatments, controlling yields, hand-harvesting, and keeping added sulfites to an absolute minimum.
- In the cellar, by aging all his wines in oak barrels.
Across every cuvée we tasted, the oak aging remains wonderfully subtle, with delicate toasted notes that simply enhance the elegance of his Chardonnays and Pinot Noirs.
Antoine OLIVIER instantly captivated us with the delightful contrast between his razor-sharp precision in winemaking and his playful personality. His creations are a true reflection of his discerning yet quirky character. He handpicks the stave-makers for his barrels, yet shows a wonderful sense of humor when naming his cuvées.
