It is in the heart of the Nièvre, in the Loire Valley, 200 kilometers south of Paris, that the CHOLLET family has been garnering medals for 60 years.
Gilles started working alongside his father in 1980 with a strong conviction: vinifying each terroir separately.
Thus, each cuvée, although crafted with the same consistent precision, reveals distinctively unique characteristics.
He was joined in 2010 by his son Séverin, who quickly brought a touch of modernity to the vineyard.

Together, they decided to let the terroirs reveal their full splendor by progressively transitioning to a High Environmental Value certification, followed by a conversion to organic farming

The estate is located in Pouilly-sur-Loire, a commune producing mainly 2 AOCs:
- Pouilly sur Loire: An approachable, easy-drinking wine made exclusively from the Chasselas grape—well known in Switzerland for producing Fendant, yet entirely distinct from the world’s finest table grape grown in Moissac in Southwestern France (not that I'm biased, of course 😉)
- And its famous big brother: Pouilly Fumé, crafted exclusively from Sauvignon Blanc

It is this Pouilly Fumé that we have chosen to share with you, through 2 beautifully distinct expressions:
- The first is crafted on the Caillottes terroir
It reveals an intense nose of citrus and white-fleshed fruit, making it a delight to pair with endless culinary creations
- The second is crafted on a terroir of Kimmeridgian marl (ancient fossilized oyster shells) known as Les Terres Blanches.
It is a quintessential expression of the appellation, boasting notes of citrus, flint, and gunpowder—perfect to savor alongside shellfish, seafood, fine fish, and even tender white meats
